Kerala Style Stew

Required Ingredients:

  • Potatoes – 2 (peeled and chopped into small pieces)

  • Onion – 1 (sliced thinly)

  • Green chilies – 2 (sliced)

  • Ginger – 1-inch piece (sliced)

  • Curry leaves – 1 sprig

  • Black pepper – ½ teaspoon

  • Coconut milk (1st extract) – ½ cup

  • Coconut milk (2nd extract) – 1 ½ cups

  • Salt – as per taste

  • Coconut oil – 1 tablespoon

Preparation Method:

  1. Heat coconut oil in a pan, add curry leaves, green chilies, and ginger, and sauté.

  2. Add sliced onions and sauté until soft.

  3. Mix in the chopped potatoes and combine well.

  4. Pour the 2nd extract of coconut milk, add salt, cover, and cook for a few minutes.

  5. Once the potatoes are well-cooked, add the 1st extract of coconut milk and turn off the heat.

  6. Sprinkle crushed black pepper and garnish with curry leaves.

  7. Cover and let it sit for 5 minutes for the flavors to blend. Serve hot.
