Coconut Rice

Ingredients

 

Ponni Rice  -  2 cup

Coconut  - 1 cup

Onion – 1 big

Tomato  - 2

Green chillies  - 10 nos

Ginger -  small piece

Garlic  - 5 cloves

Chilly powder  -  ½ tea spoon

Turmeric powder   1  tea spoon

Oil  -  2 table spoon

Ghee – 2 table spoon



Method of preparation

 

Wash and soak the rice and drain out the water and keep it aside. then take the grated coconut and add one pinch of cumin powder and little water and make a paste.  Then extract and filter  the milk from  prepared paste and keep it aside.  Take a pan , add ghee and oil and heat. Add chopped onion  and saute,  when the onion gets light brown colour add ginger, garlic curry leaves  and again  saute, then add tomato into it and saute  well. Then add all the chilly and turmeric  powder and mix. Then pour the  coconut milk  and when it gets  boiled add  washed  rice and required salt into it and cook it  for some time by closing the lid.   When the water get completely drained  keep the lid closed  and cook it again for five minutes  in low flame.Tasty coconut rice is ready to serve.
