Ingredients:

  • Raw rice – 2 cups

  • Coconut – 1 cup (either coconut milk or grated coconut)

  • Potato – 1 (boiled and mashed, optional for softness)

  • Yeast – ½ teaspoon (or 1 teaspoon toddy)

  • Sugar – 1 tablespoon

  • Salt – ½ teaspoon

  • Water – as needed

Preparation Method:

  1. Soak raw rice for 4-5 hours, then rinse and grind it coarsely.

  2. Add grated coconut and boiled mashed potato, then grind to a smooth batter.

  3. Warm a small cup of water and mix yeast, sugar, and a pinch of salt. Let it ferment for 10-15 minutes.

  4. Add the yeast mixture to the batter and mix well.

  5. Allow the batter to ferment in a cool place for 6-8 hours or overnight until it rises well.

  6. Grease a pan with a little oil, pour the batter, cover, and cook on medium heat.

  7. Kallappam can be cooked on one side or flipped for even cooking.
