Ingredients:
- Raw rice – 2 cups
- Coconut water – 1 ½ cups
- Yeast – ½ teaspoon
- Sugar – 2 teaspoons
- Salt – ½ teaspoon
- Baking soda – ¼ teaspoon (optional)
Preparation Method:
- Soak the raw rice in water for 5-6 hours, then grind it into a smooth batter.
- Mix yeast, sugar, and a little water, and let it sit for 10 minutes to activate.
- Add this yeast mixture to the ground batter and mix well.
- Allow it to ferment for 6-8 hours until the batter rises.
- Add salt and mix gently.
- Heat an appam pan, pour a ladleful of batter, and swirl it to spread thinly at the edges.
- Cook until the center remains soft and the edges turn crispy.
- Serve hot with curry, stew, or coconut milk! 😋
