Palappam

Ingredients:

  • Raw rice – 2 cups
  • Coconut water – 1 ½ cups
  • Yeast – ½ teaspoon
  • Sugar – 2 teaspoons
  • Salt – ½ teaspoon
  • Baking soda – ¼ teaspoon (optional)

Preparation Method:

  1. Soak the raw rice in water for 5-6 hours, then grind it into a smooth batter.
  2. Mix yeast, sugar, and a little water, and let it sit for 10 minutes to activate.
  3. Add this yeast mixture to the ground batter and mix well.
  4. Allow it to ferment for 6-8 hours until the batter rises.
  5. Add salt and mix gently.
  6. Heat an appam pan, pour a ladleful of batter, and swirl it to spread thinly at the edges.
  7. Cook until the center remains soft and the edges turn crispy.
  8. Serve hot with curry, stew, or coconut milk! 😋
